After a lovely day out brunching and walking through the park, my mind travelled to dinner time. What were we to eat? With the tall one craving something sweet yet savoury I thought perhaps Chinese BBQ chicken served on a bed of rice, with a side of vegetables would settle his weird cravings.
I distinctly remember eating this as a child numerous times as my Sunday roast. The sauce is sweet and aromatic and in my opinion, one of the best sauces to mop up with roast potatoes or even white rice! This recipe can be adapted for a whole chicken or chicken pieces. But for this recipe we opted for chicken thighs on the bone.
This Chinese BBQ Chicken is pretty simple to make, and it’s one pot cooking! It’s just perfect for those lazy day meals and clean up.

1/2tbspChar sui sauceor honey
1tspChinese five spice
2tspfish sauceThis will act as your salt
Chives or Spring onionsfinely chopped
Red chillifinely chopped
1tsptoasted sesame seeds
Mix all of the marinade ingredients with the chicken thighs in a bowl and cover with cling film or a lid. Leave it to marinade in the fridge for at least an hour or you can leave it overnight for deeper flavours.
Preheat the oven to 200 degrees Celsius.
Place the marinated chicken into the oven for 60 to 90 mins depending on the size of your chicken. Larger pieces take longer. (Be sure to check your chicken every 30 mins)
When the chicken has been cooking for about 40 minutes prepare your rice.
15 minutes before your chicken is finished cooking remove the lid and cook for the remaining time. This will allow it to brown the chickens skin so it's nice and crispy.
Remove from the oven. The skin should be crispy and the sauce sticky and sweet smelling.
Lightly toast your sesame seeds on a high heat for 2 minutes. Chop your chilli and chives and sprinkle all the garnishes over the chicken.
Serve the chicken with your rice and choice of sides.
